Dennys Food and Recipes: Breakfast: Easy Simple French Toast Casserole

Dennys Food and Recipes: Breakfast: Easy Simple French Toast Casserole: From Denny:  Whether it's the holidays, a busy summer when the kids are out of school or company came to visit, we all need something fast and simple to put together that's a crowd pleaser.  This simple easy to assemble breakfast casserole fits that bill!

All the ingredients required are a loaf of good French bread, a full 8 ounces of your favorite brand of cream cheese, milk, maple syrup, butter, sugar and eggs.  Add fresh fruit to serve and it's that easy!

Usually when a recipe calls for sugar I often substitute agave syrup or brown rice syrup or even molasses.  If you don't like or can enjoy cow's milk why not substitute almond milk?  When butter is in a recipe I choose to clarify it just because we love the extra boost of flavor at our house from browning and filtering out the milk solids - as well as the added health benefits.  You could use margarine in this recipe as a substitute too.  And, to gild the lily, why not add a few shakes of nutmeg and/or cinnamon, some chopped pecans or walnuts before baking?  Yeah, Flavor Town is the name at our house...

3 Tasty Persimmon Recipes: Bread, Cake, Pudding, Persimmon Facts






From Denny:  Persimmons.  Look forward to these every year when they are in season?  Just when you start to forget they exist, then, suddenly they show up in the grocery store.  Pretty much the story of our lives as there is so much abundance around us in the harvest time.  That sends you hurriedly searching yet again for a great persimmon recipe. So, you end up here at this food blog, right? :)


Seriously, these great recipes were recently featured in our local newspaper by an avid persimmon grower with a beautiful persimmon tree in her Louisiana yard, offering great advice on growing and cooking persimmons.  One tree yields a lot of yummy tasty treats to enjoy baking into awesome goodness!  This year her persimmon tree almost broke her record; it produced over 1,500 persimmons.

After a record amount one year, the persimmon tree will take a break next year and produce less.  After harvest, prune the house high tree because you will want it to branch out as much as possible.  Pruning is what keeps a tree producing a lot and prolongs its life for many years.  It's often difficult to reach the fruit at the top of tree so just leave it as food for your neighborhood birds.  They will be sure to thank you!...

Comfort Food From Louisiana: Mardi Gras: Quick Mardi Gras King Cake: From Denny: This version of the sweet yeast bread known as King Cake only requires an hour in the fridge to chill and rest the dough. Then it rises for another hour or so while you work on putting together the yummy filling.

The traditional three colors of icing are green, purple and gold. Make sure you wait for the baked cake to cool off before inserting a small hole in the bottom of the cake to place the miniature plastic baby.

It's considered good luck for the following year to receive the baby in your slice of King Cake. You also get to pay for the next King Cake. Hey, with fame comes social responsibility! :)

Comfort Food From Louisiana: Mardi Gras: New Orleans Zulu King Cake: From Denny: When you experience Mardi Gras in New Orleans one of the first things you want to enjoy again is the famous King Cake.

Here in Baton Rouge our grocery stores and local bakeries offer literally dozens of varieties from chocolate eclair to cream cheese and blueberry. Those are two of my favorites. :)

The Zulu King Cake has coconut and chocolate chips. Cinnamon, sugar and cream cheese is another popular version.

Muffin Monday: Pina Colada Muffins

From Denny: Here's a fun little recipe from a bed and breakfast down in Florida. It includes coconut and pineapple for a sweet moist muffin of sheer delight. It's also very easy to make because it employs a yellow cake mix. If you don't have any rum extract you can easily substitute vanilla extract in its place.


*** Remember to support small business in your area and when you travel. Why stay at a Big Business hotel as you travel when you can stay in a more home like atmosphere of a bed and breakfast inn? The prices are comparable, the people friendlier and your stay will be memorable.


Pina Colada Muffins

From: Magnolia Plantation Bed & Breakfast Inn
309 SE 7th Street * Gainesville, Florida 32601

Makes: 24 Medium muffins.

Ingredients:

1 lb box of yellow or butter cake mix
1 tsp. pure coconut extract
1 tsp. pure rum extract
1 cup flaked coconut
1/2-1 cup chopped nuts (walnuts or pecans)
8 oz. can crushed pineapple, undrained

Directions:

Preheat oven to 350 degrees. Prepare cake batter according to package directions. Add remaining ingredients and mix for 1 minute. (Do not over mix.)
Fill greased muffin cups 3/4 full and bake for 15-20 minutes or until golden brown. Let cool on wire racks.

Recipe: White Chocolate Walnut Bread Pudding

White Chocolate & Walnut Bread Pudding

From: O'Donnell's Restaurant, Chef Phil O'Donnell

Ingredients:

1½ quarts milk

2 teaspoons vanilla extract

6 large eggs

3 cups sugar

1- to 1 ½ lbs. stale New Orleans style French bread

½ lb. white chocolate

1 cup chopped walnuts


Directions: Add milk and vanilla to a sauce pot and scald. Set aside.

Put eggs and sugar into mixing bowl and whip until doubled in volume.

Slowly whisk scalded milk into egg and sugar mixture.

Add this mixture to the bread in large mixing bowl and let soak for 20 minutes.

Fold in the white chocolate and walnuts.

Put into a 13” x 9” casserole dish and bake at 350 degrees for 45 minutes to 1 hour. Check for doneness by placing a toothpick into the center of the dish. If it pulls out clean, the bread pudding is done. Serves 8-10.
