Cookies: Chocolate Nut Biscotti

Chocolate Nut Biscotti
From Denny:  A wonderful cookie recipe from one of my favorite coffee sites:  Gevalia.  This cookie pairs well with a French Roast or a Dark Roast coffee choice.

I've been ordering from them since Time began it seems.  Gevalia is from Sweden where folks drink a ridiculous amount of coffee.  We thought Americans were addicted.  These guys make us look like amateurs! :)

When I was up on the site ordering some new items today I noticed they started putting up some recipes.  You know me; I've got to collect them for you and me to try.

BTW, I don't get paid for endorsing this site.  I just happen to have enjoyed a long relationship and good results from them for well over a decade.  So, I feel comfortable telling you about them.

They always run specials and end of the year sales for tea and coffee accessories that are often quite good too.  Quality merchandise and quality service.  I love their teas as well.

For now, try out this chocolate biscotti recipe sure to give you a warm smile of contentment!

Baked Pear Parcels with Lemon Chamomile Sauce

Dennys Food and Recipes: Awesome Holiday Dessert: Baked Pear Parcels With Lemon Chamomile Sauce: From Denny: Pears come in season during the Christmas holidays and are plentiful. But have you thought about what to do with them beyond enjoying them fresh or giving as holiday gifts?

Our local newspaper here in Louisiana included some recipes from USA Pears, so, of course, you know I just had to go explore their site. The site is set up to promote the pear growers' product and awareness of the fruit. Since I've been thinking about setting up my own organic orchards I've been visiting a lot of sites like this one.

While their recipe section is not extensive it has some gems like the following recipe well suited for the holiday table when you want something special to wow the family or your guests. If, you are like me, you like to try new recipes or variations on a popular theme - like baked pears. A nice touch is the lemon chamomile sauce that snuggles up to these pears.

Poems From A Spiritual Heart: 20 Christmas Poems From Favorite Classic Poets: From Denny:  Revisit some old favorites and discover new poetry friends from the past century.  Here are 20 classic poems, some familiar like "The Night Before Christmas" and many more are so old and not taught in the current fast-paced culture that the past couple of generations may not have read them. These poems are so dense with imagery and archaic language it will exercise your brain and warm your heart at the same time! :)

Dennys Funny Quotes: Funny Video Fail: Static Charged Dog Prances Proudly: From Denny:  Every animal lover will laugh at this one.  Hey, the dog just wanted to get a good puppy massage from his owner.

Of course, with it being winter and the air so dry the dog hair got so charged up it produced this hilarious result - with the dog wondering why everyone was laughing.  Check it out:

Comfort Food From Louisiana: Beef: Braised Sirloin Tips: From Denny: Want a low maintenance meal to throw in the oven during the holiday season while you tend to other things? A hearty casserole is always welcome when the weather turns chilly. You might want relief from dining on turkey. Why not try this easy braised sirloin tips recipe?

Besides, it has brain food: mushrooms. During the holiday season it's easy to get frazzled and it sure is fun to know that mushrooms are available to get our overloaded brains back on target. :)

Cookies: Chocolate Bliss

chocolate bliss cookies1 620x465 Chocolate Bliss Cookies
From Denny:  A melt-in-your-mouth cookie favorite.  A local food writer received it from a friend in Nashville, Tennessee.  "And she told two friends - and she told two friends..." :)  This cookie has been making the rounds with chocolate foodies.

It's an easy recipe, fast enough to whip up for the holidays.  Part of what makes this cookie so delectable is that half of the chocolate chips are melted and added to the batter along with the unmelted ones.  It's like what chef Paul Prudhomme practiced with the concept of layering the same taste in a dish.

A note about melting chocolate:  Remember to use dry utensils.  Even a tiny amount of water can cause the chocolate to stiffen and not melt properly.  We can't have that, now can we? :)

If you want to make clean up faster and easier, think about lining your baking sheet with parchment paper.

Note:  You might want to do one cookie as a test cookie to see how long it takes your oven to get to the puffy stage, usually 9 to 10 minutes in most cases.  But take the time and do the test because your cookie size may differ from the recipe.  It's always worth the effort to do a test when it comes to chocolate.  Everyone has a personal preference of how they want the cookie to taste and the texture.

Want a new cookie recipe for Christmas?  This one may just become your family's new holiday tradition!

Read on for the recipe:

Comfort Food From Louisiana: Cajun Red Beans and Rice

Mulate's famous red beans & rice with sausage,...
Image via Wikipedia
Comfort Food From Louisiana: Cajun Red Beans and Rice: From Denny: Red Bean and Rice is a traditional recipe in Louisiana that was the original Wash Day food every Monday, in every household in New Orleans, rich or poor. These beans could simmer on the stove for hours, leaving time for household chores.

Living in Louisiana, sometimes I forget some people don't know how to make this simple delicious dish. It's seems when I am researching up pops something else that I just know you will want to see.

I've been thinking lately of how to get more beans into our diet by adding to traditional recipes and found some awesome recipes from the various bean grower sites that I will be featuring soon on all my food blogs. If you are not yet sold on beans as a healthy and inexpensive food, this dish would be a great introduction.

From Silver Palate Restaurant Sheila Lukins: Sticky Toffee Date Cake

Dates and Yogurt

From Denny:  Dates are loved around the world.  In the Middle East they are a traditional part of the culture, offered as a sign of hospitality.  Dates are served with strong black coffee and sometimes yogurt to balance the intense sweetness.

We love them in America too, especially here in Louisiana, and we never miss a chance to check out a cake recipe featuring them.  One beautiful characteristic of dates is that cakes like this freeze well and can be enjoyed months later.

This recipe is from a long time famous food writer, Sheila Lukins.  Read on to find out about her many cookbooks she has authored as she has worked for Parade Magazine and co-founded the restaurant takeout shop at the Silver Palate Restaurant.

People actually go to vacation here just to experience the dangerous jet blasts from the landings.

In the second video you will see people falling down on the sand and get blasted by what looks like a mini sand storm. Be sure to bring your safety glasses with you when you go to experience this new cheap thrill for tourists! :)

Comfort Food From Louisiana: 2 Recipes: Coffee Cake and Apple Cake Topped with Pecan Streusel

Coffee and Cake

Comfort Food From Louisiana: 2 Recipes: Coffee Cake and Apple Cake Topped with Pecan Streusel: From Denny: Lots of tasty pecans throughout this dense coffee cake, perfect for breakfast or an afternoon snack with a great cup of dark coffee. Here in Louisiana we love Bergeron pecans! Find the freshest pecans you can and buy them in large pieces as they will still retain more of the flavor.

Of course, we cake folk all know how delightful it is to use sour cream in any cake or muffin. The tenderness and full flavor can't be matched by anything else except maybe a high quality yogurt.

While searching for a photo to go with this post I happened upon a Rick Bayless recipe on flickr that is so unusual you just have to take it out for a foodie spin: Apple Coffee Cake with Pecan and Bacon Streusel.

Awesome Chocolate Pecan Tart

From Denny:  This easy tart combines two of my favorite flavors - chocolate and pecans.  Louisiana Bergeron pecans are wonderful if you can get them where you live.  If not, just look for the freshest ones, even asking your grocer when a new shipment is due.

Pecans exude such a wonderful aroma when roasting in the oven that is hard to resist.  Make sure you slightly warm the dessert when you serve it for the holidays.  That's how we like it at our house! :)

Black Raspberry Chocolate Macadamia Cookies

black raspberries

From Denny:  Who doesn't love raspberries for the holidays?  This cookie is dripping with butter, chocolate goodness, black raspberry liqueur and chock full of macadamia nuts.  Not a lot of sugar and flour either to make them.

It's a rich cookie - but easy to make - to impress your family and friends.  Of course, that's if they ever get a chance to taste them!  Beware of the kitchen cookie gremlins.  They lurk in the most unexpected places. :)

Flourless Chocolate Cake and Mocha Buttercream Icing

Chocolate Raspberry Mosaic

From Denny:  Check out this all time favorite - the flourless chocolate cake.  This time it's paired with another favorite flavor - the all important coffee!  Somehow, I just have to figure out how to grow coffee beans in my back yard.  Can you imagine how sweet that would be to pick your own beans and then roast them?  While we are dreaming we might as well include our own cocoa plants, right?  Hey, "Go BIG or go home!" :)

Happy Holidays and thank you for all your support this year!

Comfort Food From Louisiana: Simple Appetizer From Chef Poppy Tooker: Andouille in Creole Mustard Cream Sauce

Comfort Food From Louisiana: Simple Appetizer From Chef Poppy Tooker: Andouille in Creole Mustard Cream Sauce: "From Denny: New Orleans food is known for its great tasting creative comfort food. It's also loaded with calories, usually from the sauces. This delectable appetizer qualifies for the High Calorie Club. But that's the beauty of Louisiana food as you can often choose to serve it in smaller portions to help reduce the calorie load while still enjoying great flavor!

Chef Poppy Tooker did just that. She sauced the andouille slices in heavy cream flavored with Creole mustard. If you can't find andouille sausage or Creole mustard in your area just substitute with your favorite sausage and a great deli mustard of full flavor."

Comfort Food From Louisiana: Chef Recipe: Crab Calas with Remoulade Sauce

Comfort Food From Louisiana: Chef Recipe: Crab Calas with Remoulade Sauce: "From Denny:  Chef Poppy Tooker is a New Orleans icon, much loved and respected as she is interesting.  She is like a walking trivia foodie encyclopedia and she sure does relish telling the tall tales of Louisiana food and history.

Check out some of her latest trivia offerings and appearances to tantalize your mind as much as your tastebuds:

* Louisiana's Crystal Hot Sauce was used in WWI Army field rations. I'm a bigger fan of Louisiana Hot Sauce.  It's milder than Tabasco and less vinegar.  Goes great on eggs in the morning.

* Camellia red beans are the finest grade of red beans.  Camellia buys up all the Hayward (finest top grade) beans, leaving grades A and B for the rest of the country.  Hayward grade beans are named for the family that founded Camellia in New Orleans back in 1923.  They still own it today.

Can we ever imagine the Monday wash day without Camellia red beans?  Life might never have been the same in New Orleans.  Even Louis Armstrong might not have been known for his endearing signature statement, 'Red beans and ricely yours.'"

Dennys Food and Recipes: Easy Dessert: Blueberry Yum Yum Cake: "From Denny: What could better describe a trip to Heaven than fresh blueberries, sugar, real butter and a creamy whipped filling for this delectable cake? A simple recipe that is as easy to make as it is to eat!

After you put this cake together it goes into the fridge for chilling time, about an hour. Make it before you start dinner and it should be properly cool by the time everyone finishes dinner. Try not to cheat and choose the dessert as the first course!"

Dennys Food and Recipes: Easy and Simple: How To Make The Best Key Lime Pie

Flounder's Key Lime Pie

Flounder's Key Lime Pie, in Pensacola, Florida, a stacked key lime pie

Dennys Food and Recipes: Easy and Simple: How To Make The Best Key Lime Pie: "From Denny: Making your own key lime pie is so simple - and rewarding! It's definitely one of my favorite desserts, especially in the heat of the summer. The tartness really cools you off. FYI, any tart food cools down your liver, which, in turn, cools off your body in hot weather. So, think apples, limes, grapefruit and blackberries if you want to cool off the healthy way.

Florida is known for their key lime pie and there are fans of it all over the country now. The real secret to making this simple and easy famous pie is to purchase real key limes for the recipe. Key limes are very small, very tart and thin-skinned. When ripe they turn from green to yellow.

Most limes in our American grocery stores are those large beautiful, neon green and thicker-skinned Persian limes. Persian limes are also much less tart so they don't deliver that full flavor to the pie cooks, and tasters alike, desire.

How simple is this pie recipe? Really simple: 100 percent key lime juice, sweetened condensed milk and a good graham cracker crust with a little melted butter, brown sugar and chopped nuts. At our house we make the chocolate graham cracker crust while others choose to use traditional pastry crust. It's your preference."

Computer Crashed This Week, Back Up Soon

From Denny: It had to happen sooner or later, right? The Dell Dimension was lingering like a slow tortoise crossing the road and stopping traffic. It just turned five years old.

After a few days of trying to fix it on my own I finally admitted defeat and took it into Office Depot. When I got the high quote I knew the Universe was advising me it was time to purchase a new one for practically the same price. It was just a couple of weeks ago I was in there, cruising the tech aisles, drooling over the terrabyte goodies while my husband grinned and shook his head.

So, yesterday, my husband looked at me and looked at the old guy Dell and said it was time to meet the new BFF guy on the block: HP. Happy Birthday to me a few weeks early. My husband turned to me today and said, "Someone's in a better mood - and so much happier. Welcome back to the plugged in human race." :)

Oh, and for the Fourth weekend Office Depot has lots of great sales on computers and other happy tech goodies.  If you are like me, finally having to part with an old friend, take a look around.  Who knows?  You just might meet the new love of your life!

The Social Poets: Funny Jon Stewart Mocks Wall Street For Causing Greek Crisis

The Social Poets: Funny Jon Stewart Mocks Wall Street For Causing Greek Crisis: "From Denny: Get your crash course in crooked banking Wall Street style from your favorite comedian. He does make learning fun. Why wasn't college this entertaining?

You have all hear about how Greece is melting down financially. Recently, the European Union put on hold their $billion bailout while they await Greece to sell off some of their assets. What took the Greeks so long to get around to the obvious? They should have sold their banks and state-owned companies years ago when they were first in trouble.

If you have ever visited Greece you soon learn they have one terrific lifestyle. It's not terribly responsible on the individual level any more than on the national level. They literally party every night, spending hundreds of dollars a night. They do not save money. They don't believe in savings accounts. Amazing."

Dennys Funny Quotes: Funny Video: Cat Ferociously Barks, Not Meows, To Protect House

Tough kitty

Dennys Funny Quotes: Funny Video: Cat Ferociously Barks, Not Meows, To Protect House: "From Denny: Talk about hilarious! I've had cats with this level of ferocity to protect but never one that barked. Mine were more like silent ninja types that were ready to lop off an intruder's head. Cats are fiercely loyal to The One that fills the food bowl and gives proper cat head massages.

But I digress... This crazy female cat is one fierce Queen! She barks at the cars that pass by her house - and it's non-stop barking no less. What's really funny is she sits up in an open window to do her sentry watch, fur bristled out to look larger than she is - sort of like when an ant stands up on a leaf to appear larger to intruders.

When the cat owner comes up with a video camera to record her unique style of 'watch-dogging' - and the cat is busted for barking - the cat starts meowing like a normal cat should. It's like 'You blew my cover, dude, now I have to look like a wimpy kitty for the camera.'"
